Melvin Calix is 33, second-generation, and runs Finca Grevillea in the highlands of Marcala because he genuinely likes it. The farm is named after the grevillea plants that grow all over the property. His neighbours and family pick the cherries by hand. The coffee is sun-dried naturally. No shortcuts, no drama.
The collective behind it
Melvin is part of COMSA, a farmer collective that started in 2001 with 61 producers and roughly $365 in capital. They now represent over 1,500 farmers and had the foresight to go fully organic from day one, when everyone else in the region was still reaching for chemicals. That kind of conviction tends to show up in the cup.
The process
Naturally processed Icatu, Lempira, and Catuai grown at 1,248m. The cherries are picked ripe, sun-dried, and processed with the kind of care that comes from a farm where the owner is actually on the land, not just on the paperwork.
In the cup
Expect the sweetness and body that natural processing brings, with a clean finish that reflects the altitude and the organic farming behind it. This is Honduras doing something a bit different, and pulling it off.
